The Poggiomattio is a pure ciliegiolo wine made of a selection of the best ciliegiolo grapes of the old Millocchio vineyard. It is a pure ciliegiolo wine made by following the philosophy of natural wine: spontaneous fermentation with wild yeasts, long maceration on the skins, no substances added and no filtration. No SO2 is used in any step of fermentation, processing and bottling. Nitrogen, an inert gas, is used to protect the wine from contact with oxygen during racking and bottling.. This wine is aged for 18 months in used oak barrels and another 6 months in bottles before leaving the cellar.
The Poggiomattio is a wine with a lot of substance and is particularly rich in the fruitiness of the ciliegiolo grape (Cherry grape)
